General Information
These subtropical varieties of bananas are grown at higher altitudes. The baby banana is grown in the tropical countries of South America, the Caribbean, Asia, and Africa. When ripe, the skin will be bright yellow and have a cream-colored flesh. Bananas ripen naturally without being refrigerated, however by placing them in a refrigerator, the skin darkens quicker but they are kept from becoming soft and mushy for a longer period of time. Quite sweet, these bananas taste best at full ripeness, when the peel is freckled with sugar spots.
Baby bananas contain little to no fat and are low in calories. They are high in vitamin B6 and contain the amino acid tryptophan which helps the human body produce mood boosting serotonin. Baby bananas are high in fiber and potassium. They also posses a fair amount of phosphorous, magnesium, selenium, copper, zinc, iron and calcium. They contain vitamins A, B1, B2, C, E, K, Niacin and Pantothenic Acid.
