General Information 

Sage is a green leafy herb with long, narrow leaves characterized by their fuzzy feel and silver-tint. Strongly aromatic with an intense herbaceous flavor, Sage should be used sparingly. Fresh Sage is more flavorful than in its dried form.

 

History 

Sage varieties used as spice are native to the Mediterranean and Asia Minor. There are other varieties of Sage that are native to Central America, though those are fruitier and quite dissimilar to Mediterranean Sage. The most common kitchen varieties are summer Sage and winter Sage, referring to the season in which they are harvested. Sage grows prolifically in many areas around the world.
