Baby corn, a most curious thing. Neat, petite, tender and sweet. Enjoy shucking table-side and eating them raw. Steam them in the husk, let cool then shuck one side, brush with olive oil or butter and grill. Baby corn is most often prepared whole. It can be steamed and sautéed, or used fresh in salads. Baby corn is also well-suited for pickling. Cut into half-inch sections and add Baby corn to vegetable stir-fry dishes.
Harvesting Baby corn is very labor intensive, so fresh Baby corn is not as readily available. Hand-picked at a very specific time, Baby corn has a small window of “ripeness.”
