General Information 

The fairytale eggplant is one of our favorite petite delicacies and a clear sign that summer is here as these are heat-loving little gems.

Eggplant is a member of the nightshade family, which also includes: potatoes, tomatoes, sweet and hot peppers, tomatillos, ground cherries (all species of Physalis), tamarindos, pepinos, pimentos, paprika, cayenne, and Tabasco sauce. Pharmaceutical nightshade species include tobacco and Belladonna.

Fairytale eggplants are white with violet/purple stripes. The fruit are characterized as sweet and non-bitter, with tender skin and few seeds. These dainty eggplants are recommended for marinating and grilling whole; they are also the foundation for exquisite hors d’ouerves when sliced partially through and stuffed with ground lamb, duxelle of mushroom or roasted garlic and parmesan cheese and roasted until soft. Their delicate calyx makes a good ‘holder’ to pop the vegetable into one’s mouth

This Fairytale eggplant ranges in length from 1 inch – 4 inches, we have a penchant for the little ones. A favorite of innovative chefs of all culinary backgrounds, these eggplant are a delicious way to serve this often bitter and large vegetable. These little eggplants can be integrated into menus from mid-July – October.

History

While traditionally thought of as an Italian vegetable, eggplant hails from Asia. Early plants are surmised to have come from Burma or India, but the vegetable has morphed into a multitude of colors, sizes and varieties that grow worldwide.
