General Information
Because the eggplant is a member of the nightshade family, it’s related to the potato and tomato. Though commonly thought of as a vegetable, eggplant is actually a fruit, specifically a berry.

 

Appreciated for its rich, deep color, thin edible skin and tender, nutty flesh. Japanese eggplant is smaller and thinner than regular eggplant. Good quality product should be firm, dark-colored with smooth & shiny skin and relatively light for its size. It is distinguished by its dark purple cap. It is Actually more delicate in flavor with thinner skin, smoother flesh, and fewer seeds than the common eggplant.

 

When halved and grilled it captures a smoky flavor that is unparalleled. Excellent baked or fried. Cooking time is reduced with these smaller eggplants as their overall size and skin thickness is less than standard eggplant. High in fiber.
