General Information
This is Japanese spinach, designed to be grown for summer harvest. This spinach hybrid has dark green, thick, serrated leaves with an arrowhead shape. The spinach is also available as a red variety with red stems and veins much like the coloring in red chard. This hardy green will tolerate hot and dry conditions and is slow bolting which makes it a good item to plan for the spring and through the summer. Use this mild spinach in salad, stir-fry or steamed.
A traditional and elegant Japanese appetizer is made from lightly cooked spinach rolled tightly and topped with a dressing made from sesame seeds, soy sauce, sugar, and fish stock.
