General Information 

An old Japanese variety, the shishito is a wrinkly thin skinned savory and mild flavored pepper that is about three inches long. This pepper should be harvested when its skin color is bright lime green. It is completely edible, including the seeds. Shishito sweet pepper is a long-time favorite variety in Japanese markets. The shishito chile matures from a lime green to a dark red colored exterior that is wrinkled and narrow in shape. These 3″-4″ long peppers with wrinkled skin are used in tempura, yakitori or stir-fries. High in vitamins A and C, these peppers are hotter than bell peppers, but not as hot as chili peppers. The mildly flavored flesh is very good for tempura. It is a chile that is commonly served in salads or pickled and served as a condiment.
