Rivaling onions from Hawaii and Georgia, these onions will surprise you with the sweetness of a California onion. All sweet onions are members of the Granax variety and are characterized by their slightly flattened round shape – looking much like an over-grown Cippolini. Sweet onions are not necessarily high in brix – but they are low in pyruvic acid (the catalyst chemical for causing tears). It has been believed that sweet onions have at least a six percent sugar content to be labeled ‘sweet’, but this can be overwhelmed by the onion’s other profile qualities, so sugar alone is not an adequate measure of sweetness. Onions should be stored in a cool and dark place with good ventilation; do not store in plastic.
