Baby purple artichokes are harvested on the stem, which can range from 18 to 22 inches in length. The stem is thick and offers a flavor similar to the artichoke heart. Baby purple artichokes have a dark purple outer layer of leaves that becomes lighter as you get closer to the heart.
Baby purple artichokes offer a sweeter artichoke flavor than the green variety, due to the darker pigmentation.
